In a time when much of the world is facing lockdown because of the coronavirus pandemic, unable to see family and friends in person, many of us are turning to food for comfort. Different dishes are considered comfort food around the world, but they’re all typically high in sugar, fat, and salt. These flavors are key in not only making us feel happy but also in solidifying these dishes in our memories. Twenty people from different cultural backgrounds shared what their favorite comfort food is and what it means to them, and we looked at how their dish of choice is made. We’re going to take you on a born and bred food tour of Singapore - dishes that were invented right here in Singapore. Here are all the places we ate at in this Singapore food tour: Bak Kee Teochew Satay Bee Hoon (🤍 - First we headed to Bukit Merah, also known as Red Hill. It’s a huge neighborhood complex, market and hawker center. There’s a massive selection of food to choose from, but KF Seetoh took me first to eat satay bee hoon, or thin angel hair vermicelli covered in seafood and pork, and a ladle of creamy peanut sauce. Hong Seng Curry Rice (🤍 - Within the same Red Hill hawker centre you’ll find Hong Seng Curry Rice, where you can enjoy another popular Singapore street food - Hainanese curry rice. Geylang Lorong 29 Hokkien Mee (🤍 - Continuing on this food tour we drove over to Geylang to eat one of the best versions of Hokkien fried prawn mee, a stir fried noodle dish that’s one of the most beloved in Singapore. They make it by the batch and we had the chance to see the entire process of how it’s made. Delicious! The Original Vadai (🤍 - Next up over to Joo Chiat to eat at the Original Vadai - a Sri Lankan origin - yet transformed in Singapore to be more light and fluffy, totally different texture and flavor. They are so addictive and one of the best things about them is that you bite a green chili and then follow it with bites of the prawn vadai. Sha Zah Confectionery (🤍 - Finally to complete this food tour with KF Seetoh we headed over to Sha Zah Confectionery for their giant curry puffs. Tonight I’m going with my friends Jeffrey and Hsien to go eat some of their signature dishes, and I can’t wait to share this legendary meal with you right now. Friends in the video: Jeffrey Merrihue (🤍 Hsien Tan Sobrino de Botín or Restaurant Botín (🤍 is not only the oldest restaurant in Spain, but the oldest restaurant in the world, operating since 1725. They specialize in Spanish food and particularly roast suckling pig, which they’ve been serving ever since they opened. What’s also amazing is that their stone oven fire is never extinguished, it’s been flaming and never gone out ever since they’ve been open. We started off our meal with a few sides and beginning dishes, some baby eels - a delicacy in Spain in olive oil, garlic, and a few dried chilies. They were excellent, although very expensive. Next we had a few vegetable based dishes, some beans with jamon and mushrooms topped with olive oil and garlic. After that I had a chance to see in the horno or the oven room the preparation of the suckling pig. It’s roasted for approximately 2 hours, basted with a sauce to increase the crispiness of the skin. The suckling pig is served in a massive clay boat sized tray and typically served onto your own individual plate. The suckling pig is delicious, and I especially enjoyed all that meat broth at the bottom of the pan. Finally for dessert we had a milk cake and the highlight was a Spanish cheesecake. Although Sobrino de Botín or Restaurant Botín, being the oldest restaurant in the world is a tourist attraction, they have maintained the quality of their food and I think it was well worth a visit, especially for any food lover, it’s truly a landmark pilgrimage destination. Crispy Oven-Fried M-80 Chicken Wings RECIPE COURTESY OF JEFF MAURO Level: Easy Total: 9 hr 5 min (includes chilling time) Active: 20 min Yield: 6 servings Ingredients Chicken: 4 pounds chicken wings, drums and flats (wing tips not attached) 1 tablespoon baking powder 1 tablespoon plus 1 1/2 teaspoons kosher salt Nonstick cooking spray, for the rack M-80 Wing Sauce: 1/4 cup honey 1/4 cup chile sambal 2 tablespoons soy sauce 2 tablespoons apple cider vinegar 5 tablespoons unsalted butter, melted and warm 1/4 cup minced hot giardiniera, drained of oil Kosher salt and freshly ground black pepper Poppy seeds, for garnish Directions For the chicken: Put the chicken in a large mixing bowl. Sprinkle the baking powder and salt over the wings and toss until the wings are coated. Fit a sheet pan with a wire rack and spray with nonstick cooking spray. Arrange the wings in a single layer on the rack. Leave uncovered in the fridge overnight. (This ensures super crispy skin.) Preheat the oven to 425 degrees F. Set a rack in a lower-middle position in the oven. Bake the wings until golden brown and crispy, rotating halfway through cooking, 45 to 50 minutes. For the sauce: In a large bowl, whisk together the honey, sambal, soy sauce, vinegar and butter. Stir in the giardiniera. Adjust the seasoning to taste. Toss the hot wings with the M-80 Sauce until evenly coated. Spread out on a long dish, so there is not a lot of overlap. Top with the poppy seeds! Grilled Halloumi and Watermelon Kebobs RECIPE COURTESY OF MICHAEL SYMON Level: Easy Total: 15 min Active: 15 min Yield: 4 servings Ingredients 2 cups cubed halloumi 2 cups cubed watermelon Olive oil Freshly cracked black pepper Hot honey, to serve Fresh mint leaves, to serve Directions Special equipment: four 6-inch skewers, soaked in salted water Set up your grill for direct heat by spreading the coals evenly along the bottom. On each skewer, alternately thread the halloumi and watermelon. Drizzle with olive oil and season with pepper. Place on the grill and char, about 1 minute. Flip and char the other side for 30 to 40 seconds. You are looking for grill marks on the watermelon and for the halloumi to get slightly soft. Remove to a platter and drizzle with hot honey. Sprinkle mint over the top and serve.
